Yield: 4 – 1 cup servings
Ingredients
- 4 cups Kale, thinly sliced, any variety
- 1 medium Carrot, peeled and grated
- ½ cup Pecans, chopped
- ¼ cup Golden raisins
- ½ cup Vegenaise® (vegan mayonnaise)
- 1 Tbsp Raw apple cider vinegar
- 2 Tbsp Sugar
- ½ tsp Ground allspice
- ½ tsp Dried oregano
- ½ tsp Dried thyme
- ½ tsp Paprika
- 1/8-1/4 tsp Cayenne pepper
- ¼ tsp Curry powder
- ¼ tsp Salt
- ¼ tsp Black pepper
- 1/8 tsp Nutmeg
- 1/8 tsp Cinnamon
- 1/8 tsp Ground clove
Directions
- Add all ingredients to a large bowl and toss until kale is evenly covered.
- Cover and chill for at least one hour.
